There’s a precious process behind the spicy, woody and cocoa character of Aged Sumatra, and it’s the fruit of the craftsman’s care that began years ago. It begins with Indonesia’s signature giling basah method. The beans are then carefully aged over more than three years – until they deliver an unforgettable cup reflecting nature’s rhythms.

THE AGING PROCESS

In a meticulous twist on the Indonesian wet-hulled process, the beans are aged in breathable jute bags over five years, delivering an unforgettable cup.

REFINED BY TIME

Careful aging of the coffee enhances its elegant woody note. Refined by time, the coffee gains in smoothness and complex spice notes.

Origin
High up around Gayo Mountain, in the Aceh province of the island of Sumatra, farmers practice the giling basah method of processing coffee, whereby coffee is hulled when still wet, developing rich, powerful taste notes as a result. But then we add a meticulous twist. Since 2016 our beans have been stocked in breathable jute bags, losing and gaining moisture as they follow nature’s seasons and rhythms. Every day, coffee is removed from its bag, aerated, raked, turned and re-bagged the following day to ensure consistent ageing. The coupling of Indonesian wet hulling with our careful 5-year ageing has developed this coffee’s unique profile. Aged Sumatra is woody and spicy in character and has an unmistakably smooth and velvety mouthfeel. The coffee intrigues with its elegantly complex cocoa and sweet caramel notes. 
Roasting
We separate this single-origin coffee into two batches for a split roast. The first split is roasted intensively but for short time, reaching a medium-dark colour. This is done to accentuate the notes created by the ageing process: Woody cedar with a sweet after-taste. The second split is roasted for longer to add intensity and a velvety body to the final cup.
Aromatic Profile
Aged Sumatra is distinctly woody and spicy coffee with a roasted character.
